Meat free and delicious sausage rolls. Perfect for picnics and packed lunches.
Ingredients
1 Cup garbanzo Beans (Chickpeas) 1/2 cup gluten flour (vital wheat flour) 1/2 cup breadcrumbs (oats roughly ground) 4 tbsp water 2 tbsp tamari (Soy sauce or Braggs aminos) 2 tbsp olive oil 2 gloves garlic (minced) 1 tbsp mixed herbs 1 tbsp vegan bouillon powder 1 tbsp nutritional yeast 1 tsp lemon juice 1/2 tsp paprika
Method.
Add the garbanzo beans, olive oil and lemon juice into a bowl, mash together (or use a hand blender) until there are no whole beans left. Add the minced garlic, mixed herbs, bouillon powder, nutritional yeast, and paprika, stir to combine together. Add the breadcrumbs and mix well. Add the water and tamari and mix well. Add the gluten flour and stir in well until there are no dry sections left. Make a ball and knead for 2-3 minutes. Wrap in cling film and chill in the fridge for 30 minutes Once chilled remove from fridge and place in chunks into a food processor, process until it looks like minced beef. Roll out your Vegan pastry and cut into equal squares. Take some of the mixture and place on the pastry in a sausage shape. Bring the two sides of the pastry together and pinch to seal. Place 3 cuts along the top of the roll. Baste with nut milk. Place on a tray and bake in the oven at 150 C 15-20 minutes (or when the pastry is a nice golden brown). Serve and Enjoy.
