Grilled Mushrooms with Spinach and Cauliflower sauce

Love mushrooms?  Try this great Grilled mushroom recipe.  Great as a starter (use one mushroom) or double up for a main. 
Ingredients
  • 4 Portabello mushrooms
  • 1 small cauliflower
  • 300g spinach
  • 1/2 - 1  cup of vegetable stock
  • 2 tbsp lemon juice
  • 1/8 tsp cayenne pepper
  • salt and pepper to taste

Mushroom marinade:
  • 3 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 2 tbsp tamari (soy sauce)
  • pinch of pepper

Method:
  1. Marinate the mushrooms and grill on high for 3-5 minutes
  2. Combine the cauliflower, 1 cup of vegetable stock, lemon juice and cayenne pepper into a saucepan and bring to the boil. Turn the heat off and let cool down.
  3. Puree the mixture with a hand blender until until creamy.
  4. Add the spinach to the saucepan with the remaining 1/2  of vegetable stock, cover the pan and cook until the spinach starts to wilt, turn off the heat and drain the spinach. Season with salt and pepper
  5. Place the grilled mushrooms on you plate, layer some of the spinach over the mushrooms, top with the cauliflower sauce.
