Running out of ideas of what to do with all that pumpkin left over from making your lantern? Try this easy to make delicious and nutritious recipe.
3 cups of pumpkin (or butternut squash), peeled and chopped.
2½ cups distilled water (boiled and left to cool at room temperature).
1½ cups of cashew nuts.
½ tsp of salt.
¼ tsp each of ginger/paprika/chilli mix.
1 garlic clove.
¼ cup pumpkin seeds.
Boil water - leave to cool at room temperature.
Add all ingredients and half the water to blender. Blend for 2-3 minutes.
Add remaining water (or to desired consistancy).
Serve with your choice of garnish.
