Raw mars bar ice-cream cake

raw mars bar ice-cream cake sliced and ready to eat
Miss the taste of that mars bar since going plant based?  Never fear, the recipe is here!
Ingredients:

The Base
  • ½  cup of cashew nuts
  • 1 cup of walnuts
  • 1 cup of shredded coconut
  • 2 tbs coconut oil
  • 2 tbs raw cacao powder
  • ½ tbs agave nectar 
  • pinch of salt

The nougat filling
  • 1 cup cashews (soaked)
  • 1 cup cashew milk (can use any nut milk or coconut milk)
  • ⅓ cup coconut oil
  • 3 tbs agave nectar  (or any other natural sweetener)
  • 2 tsp 100% vanilla extract

The caramel filling
  • 1 ½ cups dates (soacked in boiling water for 10 mins then drained)
  • ¼ cup cashew milk (can use any nut milk or coconut milk)
  • ​¼ cup coconut oil

The topping
  • ​½ cup coconut oil
  • 1 tbs raw cacao powder
  • 2 tbs nut butter or tahini
  • 1 tbs agave nectar (or any other natural sweetener)
  • 2 tbs cashew milk (can use any nut milk or coconut milk)

The method: 

The base
  1. Place all the base ingredients into a food processor or blender. Blend until almost a butter consistancy
  2. Spread the mix in to the prepared tin or dish, spread evenly.
  3. Place the tin or dish into the freezer.

The nougat filling
 1.   Place all the filling ingredients into the food processor or blender. Blend until completely smooth.
 2.   Spread the mixture over the base, ensure it is even.
 3.   Place back into the freezer for approximately 20 minutes.

The caramel filling
 1. Place all the caramel ingredients into the food processor or blender. Blend until thick and smooth.
 2. Carefully spread the caramel filling over the nougat layer.
 3. Place back into the freezer for 2 hours or until set.

The Chocolate topping
 1. Place all the chocolate topping ingredients into the food processor or blender, blend until thick and smooth.
 2. Add to the top of your caramel layer.
 3. Place back in the freezer for 10-20 minutes to set.

Remove from the freezer, cut and enjoy.
